Third Anniversary!!

Who would thought that everything started with a little toy oven I got one Christmas when I was a child. I think that is why I love this time of the year so much. This little toy oven was able to do real cakes!

A couple of years later, meanwhile I was studying High School, I took a culinary workshop with a lovely lady, her name was Meli... she showed me the art of baking (muahhaaaaa) and my passion and weight grew!! Then I had to decide what to study in College and one side of my brain (the smart one) said Engineering and the heart said Chef :) but did I listen... of course not I did and Engineer degree.

When I finished College and couldn't find a work my lovely sister gave me a Sugar craft book.... it was also a Christmas gift with the words " Follow your dreams". At that time with a College Credit to pay and not a lot of joy I ignored my passion for second time!!

But in a cold night of October 2008, one day after a long day at work, I came to my apartment, turn on the tv and there she was, Rachel Allen in London visiting Buttercup Cake Shop and Primrose Bakery, my first reaction was... I want one (ha ha) so I went online looking for a shop in Dublin and I couldn't find anything like I just saw, and then the Eureka moment came! I couldn't ignore my call for a third time (LOL). Got a couple of baking equipment and as they say the rest is history!

Fast forward to the present, and a lot of hard work, I am glad to say that I am totally happy! Yes, they are bad days in which I have to clean a natural catastrophe in the Kitchen, and days that I only sleep 3 hours but the mails of our customers saying that they really enjoyed them, and that made their party/event a happy one keeps me going.

My sister Janet: For always believing in me since day zero! I couldn't do this without you! I love you and my little nieces Sophie and Vale with all my heart! They are also good cookie makers!

Paddy: Well what can I say, my partner in crime. He has pushed me to the limit, I must call Human Rights, but I do understand my will power is zero and without his support we wouldn't be here. He always believed in me, even in the days I was sooo negative. Thank you my love!

My Brother David: For being our official sponsor! He changed our way of working forever! Love you!

My daddy and mommy: Well what can I say I absolutely adore my parents, and they have been there for me in those long working days where nothing turns out right!

Paddy's parents mama and papa: They have always been there for us, providing us with a nice warm meal when we are totally knackered. Without your support we wouldn't be here! We loved you!

My friend Ther: You show me everything is possible! I totally admire you and I am so grateful to have you in my life!

Oh yes and Peggy Porschen! I have to say I have few heroes in my life and you are top in the list! I totally admire your style and creativity, you really inspire me!

And finally................ our little ones! Kitchen Aids!! We loveeeeee you!!

Cake pops!

I have them in my mind since a long time ago, and finally I was able to make them!! Inspired by the tallented Bakerella, cake pops are little miniature cakes with cream cheese frosting dipped in chocolate!! mmm They are nice an easy to do.... Here some steps:

You can use whatever you have left of a cake, we need to crumble it (yes it sounds like not possible but it is part of the process) then add the cream cheese frosting, then do the balls and chilled them. Later deep them in chocolate and add favourite sprinkles!! and Voila!

City Deal!

Paddy and I had the brilliant idea to do a City Deal last week. We have been thinking it for weeks and we thought, well if at least 50 or 100 buy the deal that will make us happy. What was our surprise we already had 800 sales before 11 am and counting.... the final number will not be disclosed but we are overwhelmed by the response! So far the production is going well, and we have been sleeping a few hours... but our mission is to complete this task and make happy people! Some people couldn't wait and they cancel it (2 so far) :( but who will blame them, if I see the photos of our cupcakes I will want to munch them inmediately!!

Last month I went to a course in London with the super talented Peggy Porshen at her new Academy. Unfortunately, Peggy didn't give the course (that was super SAD) but her team did the course so it was pretty good. I learned how to do mini cakes and I have to say it is super easy and fun!! This will be a new product we are developing and we hope to add it to our menu soon!!

Wow we are so exhausted but happy!! We made 1300 cupcakes for ttn and we finally did our last delivery yesterday :P I went out to the mall and I noticed all the card shops have St. Paddy's display already! Is it me or the marketing is working sooner and sooner each celebration? ha ha ha Well, good that I have already thought about some flavours I want to try this year :D so in order to catch up with the world we will be selling our 20 Euro pack Paddy's theme starting next week until 18-March :)

Finally the new Year is here, so quick. I heard in the radio one month feels like a year and is so true. Well, we certainly had a lot of fun, but in December we had extra fun and stress with the snow!!

We made a fabulous new Cookie collection featuring Gingy!

We made a special Christmas photo shot with Hello Kitty and little presents!

And we created a very yummy gingerbread flavour!

Hello!! We have a couple of days left for the end of the year and we are rushing to finish the last orders of the year! Well, I think in general was a great year, and even all the bad news I believe Ireland is a beautiful country, great people and you will find the most radioactive green grass in the world!! Wow!! time flies when you are having fun!! It is again my favourite time of the year. I know it is all about marketing but still it is one of my favourite seasons. I particularly love going for a walk in City Centre and looking at the shop decorations and people rushing with loads of bags... happy children around and loads of delicious food! This year I fall in love with Starbucks gingerbread coffee and this flavour has been the inspiration for our seasonal gingerbread cupcake with creamy cream cheese frosting mmmm total indulgence!!

Well, I hope your Christmas and New Year is filled with excitement! And stayed tunned for another magical year with cupcakes, cookies and surprises!

If you still have pumpkin puree.....

Hello All :P

If you still have pumpkin puree and don't know what to do. Try this simple recipe!

Pumpkin jelly
- 1 can condensed milk
- 1 cup evaporated milk
- juice of 1 lemon
- 24 oz. pumpkin puree
- 2 bags of gelatin or 14 g. if you are Vegan try agar flakes.
- 1/2 cup of water.

Add the gelatine to the water and put it in the stove until it is well disolve. Put the pumpkin, milks, lemon in the blender and add the gelatine. Blend well and voila!!

Put in a nice pan and into the fridge!

Ha ha I know we are still in September but I can't help it to think about Halloween. When I was a child it was one of my favourite times of the year (of course Christmas and my birthday are two of my favourite too!!). My mother used to dress my sister and I as witches and my brother one year was a scare crow... oh nice time! :P I missed them so much!!! Clutter!!

Paddy and I are cleaning the place and can believe the amount of papers we acumulate during the year!! 3 bags full of papers, magazines, etc... etc... I wonder all the trees that have to die so we can have a letter from the gas, electricity etc... lesson learned......... Ask the supplier ASAP for an online statements from now on. Ahh well, the only papers I love are my books, lately I am buying loads of books, my favourites are the one of bakeries in New York but also Peggy Porschen books are lovely and the photography is very well done. Talking about books, I just found a bakery in New York that is named Baby Cakes NYC, wow they make cupcakes with no sugar, no dairy, no eggs, no milk, no soya and that are actually good for you. I was very excited about the idea of making a line with similar characteristics, but most of the ingredients are only sold in America... ohh shut :s well still pretty with interesting ideas like the use of coconut oil instead of butter (tried the banana bread and was yummy) and this is the first time I use coconut oil for baking so it was good for a change!

Now I need a bookshelve urgently!! IKEA Sunday? :) yeah!

Well, finally I made my first kawaii cookies :) hi hi hi it was so much fun, it is just you can add a happy face to almost anything and it will look cute :P Yeah! and then being super happy I start designing these little cuties. Last Saturday was definetely a good day for a White (or Navy and Ivory) Wedding, the sky was blue, the weather was nice (not to warm not to cold) and the venue was fab a Castle! Wow, when we arrived to set the cakes we were fascinated just with the place. It was really a fairy tale Wedding. The couple were fantastic and cheerful and their colours theme were Navy and Ivory and a couple of yellow flowers :) Also, we had a couple of our moist carrot cupcakes (so far my favourite of the season) mmmm moist and spicy mmmm Well, and when we picked up the stand on Sunday, we got the good news... no cupcake was left... so they were all slauther.... but they know their destiny and they are happy to fulfill it :)

Lately I've been obsesed with felt fabric toys and I discovered "She likes cute" in Flickr. Wow I have to say I'm in love with the designs and her cookies!! and of course the sweet faces.

Also, I discovered Kawaii that according to Wikipedia:

IKEA!

It is officially I am fan of IKEA, the only problem I have is that I want to buy everything but the budget (and Paddy) don't allow me to go beyond my deepest buying desires!! We are trying to organize the kitchen (aka cupcake studio) and we have found loads of solutions and ideas...now the problem is deciding... we spend 4 hours yesterday in IKEA!! Couldn't believe it... of course we went for the economical IKEA dinner (18 euro for two including dessert!) and then we even had a second dinner at the end (after 4 hours) 2 hot dogs for 4 euro each (we are pigs). And we bought a couple of stuff and spend 2 hours building a storage stacking solution yeah!!! We still have to go next weekend (hope less hours) and get the rest of the stuff.... It is so tiring to buy :P

I bought a Ben and Jerry's ice-cream Cherry Garcia and I thought mmmm this will taste good as a cupcake! and I was right! and here we go!! How this idea came, well it was the week we were doing a test for the fair size (new size) and then I wanted to take a photo to show the people the sizes so it will be easier to choose... but something lead to the next and I was watching a crime tv show.. that honestly don't know the name and then Bingo! I say how funny would that look ha ha ha Yes they look funny but I couldn't find smaller stickers for the codes as the mini cupcakes can't not be seen ... well :D

The big 3 zero is here! well in less than an hour I will be officially 30. I was afraid but it is weird this is the first time in my life that I feel happy an fulfill and this feeling gave me a kind of calmness and relief! Two years ago I was still worried I was not going to find my destiny in the world but today I can say I am happy with my good and bad choices in life! Vive la liberte!! New York, New York!!

The dream of every Cupcaker or Cupcake fan (in my opinion) is to visit the City where it all started: New York. I have to say I loved it so much! I don’t know if it is because of the culture, the fashion, the movies but there is something in the air (not only pollution) that can’t be found anywhere in the world. Well, our main purpose of the trip was to have a little break but also we wanted to try some cupcakes in the big Apple.

Unfortunately, the person in charge (coughing effect… Pa… dd y cough cough) didn’t do the homework of researching the cupcakeries/bakeries locations so we really arrive to a couple by mistake (or good luck). Of course we found Magnolia Bakery and I almost cried when I went inside. It is just perfect! A very beautiful bakery with all well presented cupcakes and cakes and wow we were amazed……….the amount of people buying cupcakes (I haven’t seen that effect in Ireland yet). We tried a couple of flavours and I have to say I loved their chocolate cupcake. Frosting is a bit harder than ours and with more sugar, but we had to try it anyway!

We also discovered there were cupcakes everywhere, in Starbucks, in the stores, coffee shops, malls, etc… We did get one in Macey’s but didn’t think it was yummy. Also, the sizes of the cupcakes are huge in some places!

We found Crumbs and I have to say this was my favourite! I tried the Cookie Cupcake mmmm and I like that they had a pack of 12 minis with different flavours (We got one and had it in New Year’s Day). Here they also sell some big cupcakes and I noticed they add the calories to everything……… more that 500 calories……. enormous and made me think if it is worthy :P but I definitely will have a 500 calories Cookie Cupcake next time :D

We want to go again as there is one Cupcakery I really really want to try, Kumquat Cupcakery but this time I will love to go during Summer, as I think will be lovely to have a walk in the City.

Christmas cookies!

I know it is too late to post a comment about our Christmas cookies but we were very busy on December and I have to post some photos! We start with our cookie range on November and I have to say I love doing cookies. It involves more work than a cupcake but it is worthy. It is like going back to school when I have to do drawings for homework........ missed that as I didn't had any homework like that in College. I remember I used to have a drawing teacher when I was in elementary school, he just to read us a story and then asked us to do a drawing with it. Doing cookies is pretty much the same, you have the cutters but only the outline it is up to you to fill in and add the colours. Sometimes doing cookies is challenging :D oh yes not as challenging as trying to loose 2 stones after Christmas indulgences but challenging enough. I have rediscovered my childhood and it is even amazing I can we working very late at night and still being excited to see the final result. I will do a tutorial very soon :) And now... stop the writing and see the photos below!!

I can't believe the year is over, it just went too fast. We are very grateful for this year and below are the highlights:

- We sold out on Valentine's day in Bloomfield Shopping Centre.
- We made cupcakes for a lot of weddings.
- We donate cupcakes for the Irish Cancer Society and the Irish Tatler Women of the YearAwards.
- I met Peggy Porschen and took some courses with her cake studio in London.
- We introduced our yummy cookies.
- We are one year doing cupcakes and that is what made last year perfect!

Thanks to all our customers and cupcakes fans to make this happen.

We love to make our own decorations, so you will find all of our cakes have handmade decorations made from scratch. One decoration difficult to master are roses but once that you get them they are so easy and beautiful :) but doing more than 300 could be very painful for your fingers!

And voila! the final product will always look delicious!

My dream came true! Last year when I was in a book store I was looking for cupcakes books for inspiration and I found a beautiful book that it caught my attention "Pretty party cakes" by Peggy Porschen and I couldn't resist and I bought it. I really love all Peggy's ideas and wow her roses are out of this world!

A couple of weeks ago I saw in her website and she was giving a master class, of course I booked it ASAP. I was not sure if she was going to be the one that will give the course and what was my surprise when I rang the door Peggy herself was in the door with her big smile! Wow ! I went to her studio, all the beutiful handmade roses and the smell... heaven! She had also a nice table with loads of different cakes :) I eat so much and I had a great time.

We made little cakes that are called fondant fancies with butterflies!

I am so happy :)

Today we did some cupcakes for Esme's wedding. Base flavours were chocolate, red velvet (without colorant), strawberry, raspberry with chocolate and lemon poppy seed. We also made a cake for the top of the stand it was actually very heavy once that we finish it!

This week we donate cupcakes and coupons for a free dozen for the Typhoon Morakot Relief Fundraiser for Taiwan and this was the first coupon redeem. We were very happy and they asked us to do cupcakes for babies, boys and girls. I was thinking.... what do babies like and then and idea just came into my head. My sister's baby Sophie loves Elmo and my sister has to repeat Elmo song like 10 times per day, so then we decided to make Elmo for girls and Cookie monster for boys :) They turn out very nice. We also have to add the names of the babies in each cupcake :) We loved the result!

The day arrived! We met all the other bakeries and cupcake fans in one room. It was super cool and inspirational to see all these cupcakes. It was also fantastic to meet the people behind this event, thanks to Ciaran and Barbs. We ate so much... so many cupcakes so little space. Also, we met some girls from Dublin and they want to do the Cupcake Camp in Dublin, if it happens will be so exiting. Well, now some pictures of the event :)

Oh yes, I forgot we also try a new recipe. Boston Cream pie with a twist, instead of the cream we used buttercream as we were worried because of the warm weather the cream won't last too long.

Yes we were there! Last Friday we went to U2 Concert and I have to say it was brilliant! At the beginning it looked very empty but at 8 it was so full! The guys know they work well ! :D

Well, anyway after a short break we will be out and running on the 01-Aug. We will have a variety of flavours, Chocolate, Vanilla, Strawberry, Coffee (for the people is always asking for this flavour) and lemon.

Hello all,

We had this order for a hen party, I think I mention before that we made a mega cupcake for this order. It was very cool and big hi hi hi but I will recommend to share it :) unless you want to spend 3 hours in the gym :P

The Sweet Cupcake Co. recommends to eat 5 fruit and veggies a day and 2 litres of water a day and keep active :) so you don't have to give up your treats!

Hello all :)

Since a long time ago I was thinking to introduce a new size ideal to replace the cutting cake in the top, and this week we had an order for a Hen Party and they asked for a big cupcake. I honestly don't like the mega cupcake that some places sell, it looks very heavy and in the top of the stand might cause an accident. So I give it a try and I got new trays for very big muffins, the result a success!! Not only it looks beautiful, but it has more room to write a name or add a couple of flowers, more or less it is a Mega Cupcake but a Mini cake... Is this clear? ha ha ha Sorry, in the last days I haven't slept (Finishing at 3 a.m in two days on a road doing orders). A couple of weeks ago when I was reading Flickr that some girls where rushing finishing orders and couldn't take photos of their cupcakes, I couldn't understand, but believe me they are totally right, who wants to take a photo at 3 a.m in the morning? ha ha ha

Today is a lovely day!! So nice and warm!! Finally, I felt that the spring is here and you see the people in the streets using light clothes, dresses, shorts :) wow it is lovely to see the seasons passing.

Today, we had a few flavors since we thought a lot of people were going to go away for the bank holiday. So we improved recipes and we did a nice lemon cupcake with candied lemon zest... so fruity :P

I was thinking this will go very good with some lemon curd filling :) I'll try next time.
